My First Recipe Post: Colorado Enchiladas

COLORADO ENCHILADAS

Thanks for your response letting me know that 99% of you would love for me to share my cooking adventures, as it is a big part of budgeting. So here is the first one, and it was a huge success!

Ingredients
1 pound boneless skinless chicken breasts
1 jalepeno, seeded and diced
1 small can diced green chiles
30 oz green enchilada sauce
8-10 corn tortillas
1 cup shredded cheddar cheese
optional - salsa
optional - diced tomato

Directions
Cover the chicken with water and boil for about 20 minutes, or until chicken is cooked all the way through. Then shred chicken, using two forks. Set chicken aside. It should look something like this:

In a non-stick skillet, over medium-high heat, saute jalepeno and green chiles for about three minutes.

Now, add a third of the enchilada sauce, as well as the chicken. Cook and stir for about seven minutes.

Pour the remaining enchilada sauce into a bowl and microwave for about two minutes. Dip each tortilla into the sauce, and fill with about an eighth (or a tenth, depending on how many tortillas you use) of the chicken mixture. Roll, and place seam side down in to a casserole dish. The tortillas are pretty fragile, so be gentle when rolling. A few breaks are OK! I use white corn tortillas, but yellow is fine as well.

Continue until all of the chicken is gone. Pour the rest of the sauce (from the bowl) over the enchiladas.

Sprinkle the cheese on top. and bake at 350 degrees for about 20 minutes, or until cheese is bubbly!

I like to top my enchiladas with diced tomato and a spoonful of salsa. But make them your own! Try sour cream, olives, lettuce, whatever makes them good for you! These are delicious, and despite the jalepeno, they are not very spicy. They are great leftover, and we can barely eat two a piece, so it makes more than plenty for a family or, as in my case, dinner for two plus lunch the next day!
